Stuffed tomato from BBQ with goat cheese

This dish is perfect as part of the BBQ! Also delicious with some baguette on the side. | Note: Use pasteurized parmesan and goat cheese to keep it pregnancy-proof.
Getting Started

Light the barbecue and let it reach a good temperature. Clear a spot for indirect cooking.

Cut the tops off the tomatoes and hollow them out with a spoon.

Finely chop the green herbs.

In a bowl, mix the goat cheese with the pine nuts, raisins and green herbs until creamy. Season to taste with salt and pepper. Fill the tomatoes generously with this mixture.

In another bowl, mix the panko with the finely grated Parmesan cheese. Crush the clove of garlic and mix this into the panko and cheese as well. Add a dash of olive oil to keep the mixture nice and loose and crumbly.

Spread the crumble over the stuffed tomatoes and place the tops of the tomatoes back on top.

Place the tomatoes in a BBQ-resistant dish or on a grill plate and place them on the indirect part of the barbecue. Close the lid and cook for about 10-12 minutes, until the tomatoes are nicely soft and the filling is hot.
